Most people who order decaf brace themselves a little. They’ve learned to expect less, thinner, flatter, a cup that tastes like a compromise before they’ve even tried it.

That reputation isn’t really about decaffeination. It’s about the older chemical processes that stripped caffeine and flavour out together, because the solvents used didn’t know the difference. Ours does.

How Mountain Water Actually Works

Green beans are soaked in pure mountain water until the caffeine dissolves out of them, the same way tea steeps, just in reverse. That water is then passed through activated charcoal, which is precise enough to catch caffeine molecules and let everything else through.

The flavour-rich water – now caffeine-free – is reintroduced to the beans, so what they reabsorb is their own character, minus the buzz.

No solvents. No shortcuts. Just water doing a job that used to require chemicals.

One honest note, in the spirit of showing the parts other brands leave out: we source high-quality Latin American beans selected for how well they perform through this process, rather than pinning the bag to one single farm.

Decaf-suitable lots shift through the year, and we’d rather keep this consistently excellent than freeze it to one origin and let quality slide when that harvest runs out.
